Spanish-inspired dishes with the trademark Ottolenghi spinMackerel escabeche saladThis fish is sensational just on grilled bread, but here it's turned into a meal in a bowl. Serves two to four.About 100ml olive oil1 banana shallot, finely sliced2 garlic cloves, finely sliced 1 bay lea。。 tsp saffron threads 。。 tsp whole cloves ¼ tsp each black and pink peppercorns 1 carrot, peeled and cut into julienne100ml dry white wine 75ml white-wine vinegar 1½ tbsp Pedro Ximénez (or other sweet sherry)1½ tbsp chopped parsley leaves4 mackerel fillets, pin-boned1 tbsp plain flour Salt100g cooked butter beans50g rocket30g pitted black olives, halved¼ tsp hot smoked paprikaHeat a tablespoon of oil in a saucepan and gently sauté the shallot for three to five minutes. Add the garlic, bay, saffron, cloves and peppercorns, and cook for three minutes. Add the carrot and sauté on a low to medium heat for five minutes. Pour in the liquids, simmer for 10 minutes, set aside to cool, then stir in the parsley.Heat all but a tablespoon of the remaining oil in a frying pan. Toss the fish in flour and some salt, and over a medium heat fry for two minutes a side. Transfer to a dish, spoon over the marinade, cover in clingfilm and refrigerate overnight.Next day, break the fish into chunks and place in a bowl. Add the marinade and remaining ingredients, plus more oil, if needs be, and toss. Taste, add salt if necessary and serve.Roasted aubergine with sofrito and chickpeas (V)My favourite Spanish restaurant outside Spain is MoVida in Melbourne, and this sofrito is based on a recipe in their first book. It's great with oily fish, roast veg, pork and chicken. You'll have some left over, but it keeps for a few days. Severe tropical cyclone Yasi struck the north-east coast of Queensland last Wednesday. Yasi was the most powerful cyclone to hit the east coast of Australia since 1918, and it made landfall at Mission Beach as a category 5 storm with wind gusts of 180mph, cutting power to over 180,000 properties and destroying homes.Agriculture suffered major losses, as the storm wiped out 90% of Australia's banana crop and caused an estimated A$500m (£315m) of damage to the sugar industry. The total losses from Yasi are expected to reach A$3.5bn (£2.2bn).Also last Wednesday, the US battled against a historic winter storm that spanned 2,000 miles. The storm, said to be the worst in decades, brought blizzard conditions, ice storms and snow accumulations up to 60cm deep to more than half the US, crushing buildings, cutting power to over 375,000 customers and causing travel chaos, with over 14,000 flight cancellations. Chicago measured 51cm of snow, the city's third largest fall on record, forcing schools to close for the first time in 12 years. Twelve deaths have been blamed on the storm.Flash floods and landslides hit Jolo and other southern regions of the Philippines on Thursday night, after five days of torrential rains, which also spawned two tornadoes. Hurricanes, drought and disease have devastated the eastern Caribbean banana industry, and Europe should support the region's farmers through this difficult timeThe destruction caused by Hurricane Tomas in the Caribbean in recent weeks is heartbreaking. But although the destruction in Haiti received media coverage, Tomas's intensity was reserved for the eastern Caribbean. A spiralling storm lingered over St Lucia. The deluge created terrible landslides, cutting off the south of the island. The damage is similar in St Vincent and Dominica.Now we are facing up to the total destruction of the Windward Islands' rural economy. Tomas has ripped up virtually every banana tree in St Lucia and St Vincent where the entire crop has been wiped out. Coconuts, cocoa and breadfruit are also all gone.Farmers who rely on bananas face an economic disaster, and a food emergency is looming. They will have no income for at least eight months, until the next harvest. That is if they can afford to replant trees.Parents are also agonising over whether they can afford to enter their children for the summer exams. Entry fees are due in January.Agriculture is the motor of the Windward Islands' rural economy. It accounts for 9.75% of GDP, according to the IMF. It is the largest form of employment in the countryside, away from the tourist areas. And earnings from bananas allow shops and small business to survive.Farmers are relying on the compassion of banks to allow them to keep their homes. They are likely to get deeper in debt.Tomas caps one of the worst ever years for Windward farmers. The financial crisis in the Caribbean is stark. The bank crisis has not just reduced tourist numbers, it has created a damaging economic downturn thanks to the over-reliance on the offshore finance industry. Singapore's water polo team at the Asian Games has raised eyebrows for wearing boldly designed swimming trunks using elements of the national flag without official approval.
